The bunches undergo intracellular fermentation for several months before the wild yeast is allowed to kick in. After partial malolactic conversion, the result is a fully dry wine with intense colour and bouquet and deep but subtle flavours, best reflecting the estate's unique calcareous terroir.

Formerly Cabernet Sauvignon, now Pinotage kept on the mash for nearly six months lends a deep colour and intense, powerful structure with nevertheless, high complexity and finesse.
The wine has a deep red color with prominent blackcurrant, rip cherries, and cassis. Full bodied, intense, and well balanced on the palate. This wine will continue to develop way into the future.

From the cool Walker Bay limestone ridges of Springfontein Wine Estate comes this wild handcrafted and unfiltered wine. A complex and unusual Sauvignon Blanc that was left to cold soak as unscathed whole berries for four days, gently extracting the exciting tannins and distinctive flavours from the skins and seeds. With a medium gold color, the wine is immediately intriguing for a Sauvignon blanc. It has captivating floral, spicy and tropical aromas with some fynbos herbaceous notes on the nose. The palate has slight tannin weight, creamy with mineral freshness and delicate acidity on the finish. The intriguing aromas and taste profile make this wine ideal partner for a variety of food.
